Dhaba Estd 1986 Delhi brings Indian Highway cuisine for patrons at the Marathahalli outlet, Bangalore!

India is known for its diverse culture and cuisines. The regional flavors and cuisine changes with every 50 Km. From Kanyakumari to Kashmir NH (National Highway) connects people and food plays a key role when it comes to NH. Dhaba celebrates this hot and sweet Khazaana of India by introducing Dhaba’s National Highway Maharaajs of Indian menu. From Punjab’s favorite Tangdis to Rajasthani favorite Laal maas and Papad ki Sabzi and Gatta curry; from sweet Gujarati Daal to Kashmir’s favorite Rogan Josh and Dum Aloo, they have carefully created this NHMI menu for serious food lovers. They have also clubbed Eastern India’s favorite fish recipes and also the popular Chinjabi (Chinese + Punjabi) dishes like Tandoori Chicken Momos and Manchurians with that spicy desi twist.

This was my first visit to Marathahalli outlet and as always this time also I was very much impressed with their vibrant interiors, and funny posters with catchy captions. The staffs are very polite and helpful. If you are lucky, you will see them grooving with some desi beats.

This time’s experience was completely different from my last visit to Indiranagar outlet where I indulged in posh Paneer tikkas, Tandoori Raan and Dal Makhani. The new NHMI menu is simple and short. We tried almost everything from the menu and what I really loved is the Chinjaabi Manchurian (Chicken), Tandoori Veg Momos, Baingan Bhaja, and Chicken Chowmein.

For heavy belting, we ordered some desi favorites like Gulmargi Rogan Josh, Dum Aloo Kashmiri, Jaipuri Papad ki Sabzi and fiery Laal maas, and Bangla special Macher Jhol along with hot Roti/Naans and plain rice. Whatever the menu is, a South Indian’s meal is incomplete without some piping hot rice.

With only two options for desserts, it’s either this or that situation and we tried the Bangla special Rosogolla and Chenna Payesh. With the right amount of sweet quotient, both the desserts were exceptionally good.

For Dhaaru shaaru (alcohol), you have to order from their regular menu. After trying some samples I opted for my favorite Aam Panna drink – Som Ras which was served on a vintage style Goli Soda bottle. Their sweet lassi is also a must-try.

In its effort to bring together the regional cuisines of India, Dhaba has revamped its dine-in and delivery menus to serve hot local favorites. Chef Ravi Saxena says, “The joy of cooking Indian food is that you can experiment with so many ingredients to come up with unique flavors. As Dhaba expands through the country we’re now focusing on becoming a national highway diner with the same old Punjabi dildaari.”

Overall I liked the NHMI menu and my experience at Dhaba Marathahalli outlet. I would definitely go back soon to savor some of my favorites. A meal for two would be ₹1400 (approximately).

Have you visited Burma Burma at Indiranagar 12th Main?

If you are looking for a unique culinary experience, then head to Burma Burma; a new vegetarian Burmese restaurant located in 12th Main Indiranagar. This restaurant is so unique in many aspects. Right from the vibrant décor colors to heavy lamps, exclusive Burmese artifacts, and cutleries, every nook and corner of this restaurant is appealing. The restaurant staff welcomes their guests with Betel leaf and water. I just loved the colorful interior which gives positive vibes. So if you are not in a good mood, just visit Burma Burma and have their Khow Suey.

They presented a gold dusted plate which had traditional Burmese doll design on it. They served us a Lemongrass cooler as welcome drink followed by an Amuse Bouche which was crispy ‘Khow Suey’; this was a perfect start to the evening.

I love samosa but never imagined Samosa in a soup. This lovely Burmese special Samuza Hincho (Soup) was made of Samosa served in tangy soup with spring onions and spicy black chickpeas.

Next on the menu was ‘Thoke’ (Salads) which I was eagerly waiting for. We had the Mandalay Laphet Thoke (the traditional Tea leaf Salad) and Tayat Ti Thoke (Raw Mango Salad). Both were brilliantly done and created a burst of flavor in mouth. The crunchiness, distinguish flavors, and ingredients used in the salads made our experience an extraordinary one.

Another interesting dish from the menu was ‘Pyan Boo Palata’ (Creamed Corn Paratha) – This dish was more on the sweeter side but I liked the combo of Creamy corn and flaky Paratha made of wheat.

Crunchy Tofu steamed Bun had mixed reviews in our table, some liked it and some didn’t. I liked the Tofu patty on the soft bun sliders. You don’t really need any dip with this as they use Mayo topping on the patty. You can spice it up with the red chili sauce available on the table.

For the main course, I had Burma Burma special ‘Khow Suey’, ‘Brown Onion, and roasted Chilli grilled sticky rice’ and ‘Stir-fried vegetables in Burmese style’. Out of all three main course dishes, my favorite was the Khow Suey. The dense flavor of coconut milk and lemongrass was a killer combo. To make the experience even better, I just added toppings like fried onions, chili flakes, fried garlic, lemon etc. Brown onion and Roasted Chilli grilled sticky rice reminded me our famous Kerala dish – Pollichathu, in which we grill masala coated fish/meat wrapped in a plantain leaf. The veg variant Burmese dish too tasted good.

Before even eating the dessert, I saw some smoky effects all around our table. After some time the much awaited Smokey Avocado Honey Caviar Ice cream and Tagu Pyian (Coconut custard served with Sago cooked in palm jaggery). The ice cream was served on a conical glass and the smoke effect due to molecular technique created a visual treat. The honey caviar simply enhanced the flavors. Tagu Pyian was just so-so. I would prefer tapioca pearls in my bubble tea.

We ended our meal with a glass of Shangri-La green tea (Peach and passion fruit flavor), a must-try at this restaurant.

If given a chance I always avoid veg food and before visiting this restaurant I was wondering how my experience will be at this vegetarian restaurant which serves only modern Burmese food.  But perceptions can be wrong at times :P Overall I had a fantastic experience at Burma Burma and already referred half a dozen guys to this place. I would definitely go back again.

Check out BORA's first experience center in India at Koramangala!

Recently BORA launched its first experience center in India where Bangalore’s renowned Chef Abhijit Saha demonstrated couple of interesting recipes using BORA Cooktop. So what’s special about this German luxury kitchen design?

The new BORA Professional boasts an electric cooktop extractor, intelligent operator guidance and is a true modular high-end system consisting of six components.

Innovation and development are part of the BORA company philosophy. BORA Professional, which was the company's first product and laid the foundations for the BORA principle in 2007, has now been perfected in terms of innovation, functionality, simplicity and the highest level of performance. The result is a genuinely self-contained system - a machine consisting of a cooktop, extractor, motor, duct (BORA Ecotube), filter and wall sleeve (BORA 3box). In this system, the cooktop and cooktop extractor communicate with each other.

BORA Professional: Latest generation extractor knob with intelligent operator guidance and electrical hood system cover flaps in the typical BORA design.

A fundamental innovation is the change from what was previously a mechanical system to the
electrical BORA system. When a cooking zone is switched on, the cover flaps open automatically and virtually silently. At the end of the cooking process, it closes again so it is completely flush and with no visible joint gap. Beneath the filter in the cooktop extractor is a drip pan for fats.

The knobs with the user interface on the front of the cooking surface form the heart of the system and enable smart operator guidance: For the first time, the operating elements incorporate the system’s intelligence, making BORA Professional the most innovative development to date. The temperature is displayed on the knob where it can be adjusted with a combined touch and rotation movement. More functions and programmes, including the cooktop extractor controls, are also executed from here. The cooking surface available and the cooking zone can be utilized to the full. This makes the BORA Professional cooking surfaces and cooking zones one of the largest available on the market. The new product enables really easy cleaning thanks to its wider extractor opening and easily removable elements.

BORA Professional is now available in two versions: still as a flexible system that offers customers optimum kitchen design freedom. Everything can be individually combined.
The product innovation is a genuine world first because BORA Professional is now also available as a plug & play version. In this set-up, the motor and cooktop extractor form one unit. The pre-configured system provides maximum simplicity and installation positions. The recirculation version is also available as free-floating countertops with an installation height of 199 mm.

A world first: BORA Professional in the free-floating countertop

The discreet design of the new BORA Professional was based on perfect user functionality: easy lifting of the extractor, feel and function of the control knob, simple user interface. Uncompromising quality is guaranteed: everything that looks like stainless steel is also stainless steel.
The new design maintains all the original BORA advantages: Cooking in fresh air with clear view, effectiveness, best materials, design freedom and even easier to clean. In the new Professional version, BORA remains focused on systems that extract downwards and captivate with their simplicity.

BORA Ecotube and BORA 3box: innovative components for a complete system

A new and unique duct system with optimally aligned wall sleeve brings BORA Professional to the point of perfection. The system now available with BORA Ecotube and BORA 3box meets the high requirements in terms of effectiveness, ease of installation and flexibility and represents a streamlined, integrated solution.

New BORA Tepan cooktop

The new BORA Professional can be combined with a new cooktop, which aesthetically integrate
through clear visual lines with the design typical of BORA.

The new full-surface BORA Tepan stainless steel grill is operated with micanite-surface heating
elements, the control electronics are integrated in the cooktop. Operation is also performed by means of the user interface for the knob. The 4 mm deep-drawn and brushed stainless steel surface with rounded inner corners guarantees simple cleaning. The temperature distribution is consistent and quick heating to 250°C in less than five minutes is possible.

  • Electrical cover flap
  • Intelligent and intuitive handling through touch-sensitive control knobs in the surface front
  • Really easy cleaning thanks to wider extractor opening and easily removable elements
  • Flow-optimised
  • One of the largest cooktops on the market (extra-depth dimensions of 54 cm)
  • One of the largest cooking zones on the market
  • First of its kind in the world: used as a compact system for the free-floating countertop with the BORA Professional air circulation system
  • Innovative design
Impressive innovative strength: coveted awards in the first year
Launched in 2017, BORA Professional received four coveted awards in the first few months: the Red Dot Award: Best of the Best 2017 was followed by the Plus X Award ‘Best Product of the Year 2017’ for innovation, the internationally renowned Good Design Award 2017 and the German Design Award 2018 from the German Design Council.

About the company:

Since 2007, BORA Lüftungstechnik GmbH, headquartered in Raubling, Upper Bavaria, has successfully developed and sold cooktop extractor systems that draw vapours downwards thanks to the use of patented technology. The innovative BORA Basic, BORA Classic and BORA Professional product ranges are sold in 58 countries worldwide.

BORA Founder Willi Bruckbauer has a vision: the end of the extractor hood. The patent he developed has multiple advantages: the premium-quality systems are more effective than conventional hoods, extremely quiet, energy efficient and easy to clean. They enable maximum design freedom for kitchens and a clear view.
The company received its first award within the scope of the innovation contest “365 Orte im Land der Ideen” (365 Places in the Land of Ideas) back in 2009, followed by the German Entrepreneurs’ Award, red dot awards, Plus X Awards, German Design Awards, Iconic Award, German Brand Award, Good Design Award and others.
